I'm surprised that I'm sharing this recipe because a few years ago - this was my signature drink. :) The cucumbers add just a hint of flavor and cut the sourness in the perfect way. Pour yourself a tall, cool glass and stay a while!
Below is the homemade recipe that I follow, but you can always use storebought lemonade (Simply Lemonade is my favorite!) I promise not to tell!
Ingredients
3/4 cup sugar
1 cup water (for the simple syrup)
1 cup lemon juice
3 to 4 cups cold water (to dilute)
Method
1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely.
2 While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice.
3 Add the juice and the sugar water to a pitcher. Add 3 to 4 cups of cold water, more or less to the desired strength.
Slice a frozen cucumber into lemonade! Enjoy! This amount Serves 6-8.
One of the first items that I bought for my kitchen starting out was a
Williams Sonoma Juicer. I always heated my lemons for a few seconds and rolled them back and forth on the counter to extract the most lemon juice from them!
